Recipe: Nutty but nice-cream

The final in my GATO & Co recipe series is my favourite of the four by far. The person who first thought to blend frozen banana into ice-cream is an absolute culinary genius in my eyes, it’s so simple, it saves food from being wasted when it’s a little past its best (in my opinion, any banana that isn’t still a little bit green is past its best!) and tastes just as good, if not better, than the real thing! I couldn’t think of anything better to serve with the GATO & Co Chocolate Brownie. It’s such a simple recipe and that extra hit of protein is ideal for filling you up!




1 medium banana, frozen

1 scoop of high quality vanilla whey protein (I use Missfits, for money off use the code JOSI5)

2 squares of 85% dark chocolate, chopped into small pieces OR a handful of Cacao nibs

1 tablespoon peanut butter



1.     Add all ingredients into a high powered blender apart from the chocolate.

2.     Blend on full for a minute until it resembles a smooth, thick icecream texture – you may want to add a little almond milk to help it on its way.

3.     Mix in the chocolate with a spoon.

4.     Depending on your preference, you can pop the mixture back in the freezer to firm up or eat it as it is with one of the chocolate GATO puds.

To transform this into a vegan treat, simply use a vegan protein and use cacao nibs instead of chocolate!
