Chocolate Brownie with Mixed Berry Coulis

The third of my four recipes with GATO & Co is a super simple and delicious berry coulis. You can make this with any berries you have to hand and it’s so inexpensive as it works really well with frozen berries. Once made, it can be left in the fridge so it’s the perfect make-ahead pudding for parties or just when the sweet tooth strikes!

Ingredients:

2 cups of Frozen mixed berries

1 teaspoon cinnamon

1 tablespoon honey

Method:

1.     In a frying pan, add all of the ingredients along with a large splash of water.

2.     Cook on a low heat for around 30 minutes, the fruits should melt down into a sauce, but mix them every 5 minutes or so to break down any larger bits.

3.     Once the coulis is at the desired thickness (I like it to reduce down quite a bit), take off the heat and serve warm or cold with the Chocolate Coconut GATO pudding.
