Spring Salads Part 2: Prawn and Mango

The second of my spring salad ideas is here and today’s is super sweet and delicious! The combination of prawn, lime and mango is pretty genius and whilst I really can’t take credit for it, I wanted to share it with any of you who may not have tried it yet. This again makes a perfect meal prep and took less than 20 minutes to pull together, and is packed with good stuff such as prawns which areΒ a great source of protein and antioxidant richΒ mango. This also makes the perfect summer dish as its full of fresh flavours, so take it along to any summer gatherings and you are sure to impress!

IngredientsΒ 

  • 1 cup romaine lettuce, chopped
  • 1 large handful spinach
  • Half a pack of king prawns, roughly 75g
  • 1/4 Mango, skin removed and chopped into small chunks
  • Juice of 1/4 lime
  • 1 courgette
  • 1 small red onion
  • Coriander

Method

  1. Wash and rinse the lettuce and spinach, then leave to dry before spreading on the plate
  2. In a bowl, cover the mango in the lime juice and leave to stand
  3. Chop up the onion and courgette and sautee with a little olive oil in a pan for 10 minutes on a low heat until soft
  4. Add the courgette, onion and mango to the plate of greens
  5. In the same pan, heat the prawns for a couple of minutes and add to the salad, topping with coriander
