Mexican Frittata

It is no secret that I LOVE Mexican food, in fact i’m not quite sure how you could not love it. As a result I think i’ve put a Mexican twist on every single type of meal at some point in the past couple of years, with very exciting results! Today’s recipe is a great ‘eat whatever’s left in the fridge’ recipe and is really inexpensive but so filling so makes a great breakfast, lunch or dinner. As with most of my recipes it came out of nowhere and was a result of being at the end of our weekly shop but with a few basic cupboard essentials, magic was made!

Ingredients

  • 1 red onion, chopped
  • 2 small sweet potatoes, diced
  • Handful of green beans
  • 1/2 cup sweetcorn
  • 1 tin of Tesco mixed taco beans, drained
  • 1 tin of tuna, drained
  • 1 tsp cumin
  • 1 tsp paprika
  • 4 eggs
  • 100g egg whites
  • Salt and pepper

Method

  1. Melt a little coconut oil in a large frying pan and cook off the onions and sweet potato on a low heat for 10-15 minutes
  2. Add the green beans, sweetcorn, beans and tuna and continue the cooking for another 5 minutes
  3. In a jug, whisk together the eggs, egg whites, seasoning and spices then pour over the mix in the pan
  4. Allow the bottom to cook for around 5 minutes then put the whole pan in the oven to cook the top, this will probably take another 5-10 minutes at 180 degrees
  5. When the eggs are set, remove from the oven and serve!
