My Best Ever Chilli Recipe!

Chilli con carne is such a staple in my house – it’s easy to batch cook, you can eat it with so many different things and it’s so delicious. I recently made what I would say is my most delicious recipe yet – I don’t usually follow any recipes but this one was so good I had to write it down. This is the perfect dinner for entertaining as you can make it ages in advance, and you can impress all of your friends and family with a healthy dish which feels so warming and indulgent – what more could you want!

Ingredients:

  • 400g Minced beef
  • 1 large or 2 small red onions
  • 2 leeks
  • 1 pack of mushrooms, sliced
  • 1 tin of kidney beans (I add in the liquid too)
  • 1 litre of good beef stock
  • 2 squares of Ombar chocolate
  • 1tbsp mixed herbs
  • 2tsp chilli powder
  • Salt and pepper to season
  • 1tsp coconut oil

Method:

  1. In a large pan, add the coconut oil, finely chopped onions and leeks until they start to soften
  2. Add in the meat, herbs, spices, seasoning and mushrooms and mix until the meat has begun to brown all over
  3. Add in the kidney beans and the stock, mix well and leave until the sauce starts to thicken
  4. Mix occasionally and about 10 minutes before the end of the cooking time, add the chocolate and mix through
  5. Serve the chilli with wholegrain rice, roasted or mashed sweet potato, veggies or salad and enjoy!

As always tag me in any recreations, don’t be scared of the chocolate – it’s really subtle and just adds a little something but you can’t taste what it is I promise (my taste testers said so!)
