Results With Lucy and Courgette Pancakes!

So it’s been nearly 4 weeks now since I started the six pack abs programme with Lucy Meck and co and I am loving it! I’ve been really feeling the burn and always look forward to the workout combinations they put together. I’m not a gym hater but after a days work I always used to struggle to find the motivation to come up with a routine and put enough effort in to make it worthwhile – this meant I wasn’t really seeing results despite having good eating habits. I also lost my way a little over Christmas as I was so busy moving house, revising for exams and helping my boyfriend recover from an operation that fitness fell by the wayside so this felt like a great way to get back in the swing of things.

One of the best bits is having the trainers there talking to you throughout the videos as it really feels like live personal training which makes it much more motivating. I also love that each video is quite short which makes the workout overall go so much quicker, and you know that if there’s a killer video that it’ll be over soon! After just 3 weeks I lost inches all over my body, including 2 inches from my waist and hips, and was starting to feel like myself again – I can’t wait to see what the rest of the plan holds!

 

To refuel from one of my workouts at the weekend I decided to try something new, I love looking to the ‘Eat Well’ plan for inspiration and decided to make pancakes but with a bit of a twist. Putting courgette into sweet breakfasts does sound a little odd but ‘Zoats’ have become increasingly popular so I thought I’d try and incorporate courgette into pancakes to keep carbs a bit lower and add some more nutrients. This is super easy to make, hope you enjoy!

 

Ingredients:

Half a courgette, grated

30g Oats

1 Scoop of protein powder (I used My Protein chocolate brownie)

2 Eggs

Splash of almond/coconut milk as required

 

Method:

  1. Either mix all ingredients by hand or using a nutribullet depending on your desired consistency
  2. Heat a little coconut oil in a pan then pour out your pancakes, cook for a couple of minutes on each side, top with whatever you fancy and enjoy!
