I’ve always been a fan of healthy ways to bake, so you still get that sweet and yummy flavour without feeling super sluggish. The idea for these came to me when I was wandering around London with my boyfriend looking into all the little bakeries and I thought there must be a way to make a healthy version of any dessert, and I love tarte aux pommes, so we went for it.
This is also super easy to make, doesn’t require a processor and a lot of the ingredients were already in the cupboard at home, it also took less than half an hour so seems like an absolute winner to me!
Makes 12 mini tarts.
150g Ground Almonds
85g Coconut oil
1 tsp Vanilla Extract
2 Small eggs
3 Braeburn apples
1 tbsp Coconut oil
1 tsp Cinnamon
Generous squeeze of honey
- Pre-heat the oven to 180 degrees.
- First get the apples on the go, peel and chop into small wedges then place in a pan with the coconut oil, cinnamon and honey – keep stirring these until the apples are going just a little soft but not too much and the sauce thickens slightly (about 5-7 minutes).
- Then mix the cake ingredients together, start with everything but the eggs and get it mixed well then add the egg mix gradually until it resembles your usual cake mix.
- Line a mini-muffin tray with coconut oil then place the apples on the bottom to form a thin layer, any remaining sauce you have in the pan can then be drizzled over the top of these
- Finally, evenly distribute the cake mix over the top of the apples and pop in the oven for about 15 minutes until the top of the tarts is just going golden and the top feels firm but spongey
- Remove and leave to cool before running a knife around the edge of the tarts to loosen then turn them out onto a flat surface (we used a big chopping board for this!)
